Pancakes with high-protein


There is no flour in sight of these cakes. These pancakes are made with eggs, linseed and ricotta, no flour, for a total of 4.3 g of carbohydrates per piece. Garnish with partially lean ricotta and strawberry pie if desired.

2 eggs plus 2 proteins shaken slightly
¼ cup ground golden flaxseed
½ cup partially creamed ricotta cheese
¾ teaspoon baking powder
¼ teaspoon of salt
1 teaspoon stevia powder or 2 tablespoons maple syrup (optional)
Nonstick cooking spray, olive oil.

How to do

Mix in a large bowl of all ingredients and mix well. If the dough is too thick, add water. If it is too loose, add more ground flaxseed.
Heat a large anti-stick frying pan on medium fire and sprinkle with boiling spray.

Pour a quarter of the mixture into the pan to make a pancake. Bake until both sides are golden brown, about 2 minutes per side. Repeat to make three more pancakes.
